This week's recipes~ ENJOY!!

 Apple Honey Mustard Chicken with Veggies


1 Jar apple Jelly
1 teaspoon ground ginger
1/2 teaspoon garlic powder
1/4 cup soy sauce
1/4 cup honey mustard
2 cups baby carrots
1 cup sugar snap peas
boneless skinless chicken breast


Directions:
1. Combine all ingredients, except chicken and veggies, in 2 quart saucepan. Bring to a boil
2. Heat grill.
3. Brush on sauce over chicken breast
4. cook 10 to 12 min
5. boil carrots 6-8 min, add peas and boil 5-6 min


When veggies and chicken are done, coat with glaze and serve


 Potato Squash Casserole


4 small potatoes, peeled and thinly sliced
1 small butternut squash, peeled and thinly sliced
1 tablespoon water
1/4 tablespoon salt
1/4 tablespoon pepper
1 lb cooked ground beef
1 small onion, chopped
2 tablespoons flour
1 1/2 cups heavy whipping cream
1 cup shredded cheddar cheese


Directions:
1. In microwave safe bowl , place potatoes and squash, cover with water and cook on high 4-5 min
2. grease 2 qt. baking pan
3. add in half of the potato mixture
4. Place water, salt, pepper, onion, flour, whipping cream and 1/2 cup cheese in bowl and mix
5. pour over potato's
6. layer the rest of the potato 
7. Bake at 350 for 60 min
8. Pour over remaining cheese and bake for 5 min
 Taco Topped Potatoes
4 medium baking potatoes
1 lb precooked ground beef with taco seasoning
1/2 cup shredded cheese
1/3 cup chopped tomato
1/2 cup chopped lettuce
sour cream


Directions:
1. pierce potatoes with fork and place in microwave for 12-15 min
2. Cut and mash insides
3. Spoon toppings on


 Veggie Salisbury Steak
4 ground turkey patties
1/2 teaspoon seasoned salt
1 cup frozen mixed veggies
1 onion chopped
2 tablespoons ketchup
1 tablespoon worchershire sauce
1 jar slices mushrooms
1 jar beef gravy


Directions:
1. Heat 12 inch nonstick skillet, med heat
2. Add patties, sprinkle with season salt and cook 3-5 min until brown
3. In medium bowl, combine remaining ingrediants
4. Add to skillet
5. Cover and simmer 10 to 12 min
Cheesy Hot Dog Chowder
2 cans white cheddar soup
2 cans potato soup
1 cup milk
1 cup frozen corn
4 hot dogs, thinly sliced
1 cup shredded cheese


Directions:
1. In 3 qt saucepan, combine soup, milk, corn and hot dogs
2. cook 6-8 min until corn is tender
3. add 3/4 cup cheese
4. stir until melted
5. Top with shredded cheese

Sick day fun with Play Dough!

 Poor Skyler has not been feeling well lately. He came home from school on Wednesday not feeling well and a bad stomach ache.
 On Thursday, he decided that he was better and wanted to go to school.
 Unfortunately, his body had a different idea. He had to be picked up from school at about 9:30 because he got sick again!
 My poor little guy. After getting cleaned up and resting for awhile, we decided to pull out the play dough and have some calm fun!
 Hayden was so excited that Skyler was home to play with her.
 They played for about an hour, making hearts and christmas trees and all kinds of fun stuff!
Even though Skyler was not feeling well, I believe that they both had alot of fun!

More grades and activities from this past week at school!

 This week Dylan continued to show good work and great skills. He has improved in his math and reading.


This is a math paper that he got a 70.
 Emily is also showing improvement in her work.

This is a reading comprehension paper that she got a 72 on.

 Another reading comprehension paper that Emily got a 67 on.
 And a math paper that Emily got a 100 on.


We had a meeting at the school on Thursday to discuss their progress. Emily's teacher, Mrs. Favuza, said that she is doing very well and adjusting to her new school and catching up nicely.

Dylan's teacher, Mrs. Harder, has said that Dylan is starting to adjust and is showing signs of improvement.

We met with the school counselor, psychiatrist, ESE teacher, Speech teacher, principal and his teacher to discuss a 504 plan. It is being put into place as of January 18th and will help him with more time to complete assignments, breaking assignments up into multiple parts and verbal directions. We are hoping that this will help him greatly!
 Skyler had a great week of school. They studied winter and snow. they made snowmen, snow, played games with hats and mittens and drank hot chocolate and made marshmallow snowmen.
He really enjoys school!

Some new Recipes we tried this past week!

Open-Faced Hamburger Philly

1 lb. ground beef
1 medium green bell pepper, cut into strips
1 medium red bell pepper, cut into strips
1 small onion, cut into strips
1/2 cup creamy Italian dressing
1 loaf Italian bread (12 inches long)
8 oz. Provolone Cheese, sliced thin





Directions:
1) In 12 inch skillet, cook ground beef, peppers and onion over med heat for 5 to 7 min
2) When cooked, drain and rinse
3) Add 1/4 cup of dressing, mix well, remove from heat
4) Slice bread horizontally. Spread remaining dressing onto bread
5) Place bread on cookie sheet and broil 4 to 6 min until lightly toasted
6) Spread meat mixture over bread. Top with Cheese.
7) Return to broiler until cheese is melted.

I served mine with a spinach mixture (spinach, reg and green peppers, onion garlic and italian dressing fried for 5-6 min) and chips!


 Beef and Ramen Noodle Bowl

1 tablespoon vegetable oil
1 medium onion, chopped
1 bag stir fry veggies with teriyaki sauce
3/4 cup water
1 tablespoon peanut butter
2 packages oriental flavor ramen noodles
3/4 lb roast beef (from deli) cut into strips











Directions:
1) In 12 inch skillet, heat oil over medium heat until hot. Add onion and frozen sauce mix. Stir until melted.
2) Add water, peanut butter and seasoning mix from ramen noodles. Stir. Cook 3-4 min.
3) Beak up ramen noodles and add to skillet.
4) Add frozen veggies. Cover and cook for 8-10 min.
5) Add beef. Cook and stir for 2-3 min.



 Swedish Meatballs and Rice


1 package frozen meatballs
1 teaspoon vegetable oil
1/4 cup chopped celery
1/2 cup chopped carrots
1/2 cup chopped onion
1 can chopped tomato
1 teaspoon garlic
1/2 cup salsa
1 teaspoon Italian Seasoning









Directions:

1) Heat oil in 12inch skillet
2) Add veggies. Cook for 2-3 min
3) Add meatballs
4) Add salsa and seasoning
5) Cover and let simmer for 8-10 min

Serve over penne pasta.

 Italian Sausage and Peppers

1 package Italian Sausage
1/2 cup chopped onion
1/2 cup chopped green peppers
2 tablespoon garlic
1 tablespoon Italian Seasoning
1/2 cup Italian Dressing



Directions:
1) Heat 12 inch skillet. 
2) Add sausage and cook thoroughly
3) Add peppers and onion
4) Add dressing and seasoning
5) Let simmer for 3-5 min

Serve over Rice.

This week the kid's had a great week of school!


This week was Skyler's first week of school. He was so excited! He has had a great week and absolutely <3 LOVE'S <3 school! He is so excited to go everyday! 

 The kid's have brought home some graded work this week that we were excited to share!

This was Emily's 5 minute math facts Quiz!
 This was Emily's science report on Caring for Horses. She took alot of time over christmas break to complete this and did a GREAT job! This counts has 2 grades for her science!
 This is their agenda that they bring home everyday! This is Dylan's for this week that we are soooo proud of! His teacher says he had a great week and really worked hard this week!

My Birthday!

My birthday started and continued like any other day, until dinner time! Deryk ordered and picked up Chili's for dinner! Yummmyyy!!! Then the celebration began!

 As many of you may know, I have really gotten into cooking and baking lately. I really enjoy it. So, my birthday gifts were all things to help my newfound hobby!

Emily got me a rolling pin. This was great, because when we make our christmas cookies, I literally used a wooden dowel to roll out the dough! lol
 Hayden got me some pink breast cancer measuring cups!
 Dylan got me a strainer!
 And some new, really sharp knives!
 This is me blowing out my candles on my red velvet cake. Yes, Deryk put 29 candles on there!
 Hayden also got me a spatula!

 Skyler got me a baster!
And a new pair of pink breast cancer kitchen scissors!



It was a great birthday! Thanks Guys! I Love you!

And...................... A DSI................. HE was sooooo excited!







After gifts, we had a wonderful christmas dinner! We missed our friends and family, but truly enjoyed our first christmas in Florida! :)
